If you're really interested in learning about encryption, pick up 
Applied Cryptography, 2nd ed., by Bruce Schneier.  Everyone I ever 
asked has said this is the book to start with for cryptography.  It's 
the only one I've read so far, but it's easy to understand and covers 
a lot.  I haven't seen it mentioned for a long time on the list, so 
thats for eveybody.
